Cinco De Mayo for Diabetics

Another holiday is right around the corner. Cinco De Mayo is coming up on Tuesday, the fifth of may of course. An easy meal option for the family that night, is Mexican cuisine. You can do a taco bar, with a make-your-own taco and/or burrito. You can use black beans, brown rice, and vegan cheese. If you have the time, you can also grill up some chicken for flavor. You already get plenty of protein with the beans, so the chicken is a nice addition.
